Few things smell better in a kitchen than freshly baked banana bread. This gluten-free version retains all the moistness of classic banana bread thanks to the combination of buckwheat, gluten-free starch, and almond flour, without the need for dairy.

It's also a perfect recipe for using up ingredients: use those very ripe bananas that no one wants to eat as they are, and in just over an hour you'll have a tender loaf with an intense banana flavor and a hint of cinnamon.

Serve a toasted slice with a little butter or jam for breakfast, or keep it well wrapped for up to 3 days at room temperature (or freeze it in portions to make it last longer).

  1. Preheat the oven to 160ºC. Mix the dry ingredients (gluten-free mix, sugar if using, baking powder, baking soda, cinnamon) in a large bowl.
  2. Mash the bananas with a fork and add them, along with the egg, yogurt, oil, and vanilla, to the previous mixture.
  3. Pour the batter into a loaf pan lined with baking paper, or grease and flour the pan.
  4. Then bake at 160°C for about 60–70 minutes, until a knife inserted comes out clean.
  5. Let cool and then slice.
