  • Mixthe gluten-free oats, protein powder, chopped nuts, and chia seeds in a large bowl.
  • Addthe peanut butter and honey (or syrup).
  • Stirwell with your hands or a spoon until a thick, uniform mixture forms. If the mixture crumbles, add a small splash of plant-based milk.
  • Pressthe mixture firmly into a rectangular mold lined with parchment paper or plastic wrap, ensuring it is well-compacted.
  • Refrigeratethe mold in the refrigerator for at least two hours (or half an hour in the freezer).
  • Cutinto bar-shaped portions once the mixture is firm.

For the chocolate coating:

  • Choose the right chocolate: Use dark chocolate (minimum 70% cocoa), ensuring it is labeled "gluten-free."
  • Melt the chocolate: Melt 100 g of chocolate with one teaspoon of coconut oil in the microwave (in 30-second intervals) or a double boiler. The coconut oil will give it shine and a more fluid texture.
  • Apply the coating: You have two attractive options:Full coating:Pour the melted chocolate over the already compacted mixture in the mold, just before placing it in the refrigerator.Decorative lines:Cut the bars first and, with the help of a spoon, draw thin lines of chocolate over them for a pastry-like finish.
